Capers are the immature flower buds from the caper bush, which is known for being adaptable, drought, salt, and heat-tolerant. Most commercial production occurs in Iraq, Morocco, Turkey, and Greece.  Climate change models suggest that the caper bush is expected to experience minimal effects from climate change and the land suitable for production may increase.
